| Description | Celiac disease is an autoimmune disorder caused by intolerance to gluten, a protein found in grains such as wheat, barley, and rye. The clinical manifestations of this disease can vary greatly, making diagnosis difficult. Symptoms include gastrointestinal problems such as diarrhea and bloating, but also extraintestinal manifestations such as fatigue, anemia, and neurological problems. The variability of celiac disease manifestations can lead to delayed diagnosis and a deterioration in the quality of life of patients. The aim of this study is to analyze the diversity of celiac disease symptoms in patients of different ages and to evaluate the availability of gluten-free meals in school cafeterias in the Brno-město district. The research questions focus on the most common and less common symptoms of the disease, as well as the level of support that students with this diagnosis find in school meals. The theoretical part of the thesis includes a literature review focused on celiac disease, its causes, symptoms, treatment, and the principles of a gluten-free diet. It deals in detail with the diagnosis and treatment of this disease and presents current scientific findings. The practical part is based on a questionnaire survey distributed online. The target group consists of patients diagnosed with celiac disease. The survey focuses on the diversity of symptoms and their impact on the daily lives of respondents. The second part of the research focuses on determining the availability of gluten-free meals in elementary schools in the Brno-město district, with data obtained through questionnaires distributed to school principals. |
