Description Artichoke (Cynara) is well known as a vegetable, but it has also application in pharmacology. The choleretic and hypocholesterolemic actions of the artichoke extract are already known. The present research is being carried out into the antioxidative and hepatoprotective effects of such extracts. These activities have been attributed to the phenolic compounds presented in the extract and to their caffeoylquinic derivatives. MEKC has been developed as a promising method for the analysis of the Artichoke extract. Separation conditions have been optimised with respect to different parameters including pH and ionic strength of the background electrolyte, SDS concentration and temperature of capillary. A buffer consisting of 100 mM SDS in 20 mM sodium dihydrogen phosphate, 20 mM disodium tetraborate pH 8.5 was found to be the most suitable electrolyte for this separation. An applied voltage of 28 kV (positive polarity) and a temperature of 25 oC gave the best separation of the caffeoylquinic acid derivatives.
